About Erica

Erica Rushbrook is a certified holistic health coach (Institute of Integrative Nutrition, New York, 2009) who blends modern nutritional science with traditional wisdom to create an approach to eating that is grounded in science, rooted in pleasure, and respectful of the planet.

Erica is the author of How to Eat (2025) and was awarded a scholarship to the prestigious MAD Academy in Copenhagen (founded by Rene Redzepi of NOMA) (2024). She holds a Diploma in Nutrition (2016) and a Master of Business Administration (2024). In addition to her background as a health coach, her career spans opening and operating a highly acclaimed local food restaurant in the Adelaide Hills, designing recipes for print media, working as a food stylist, and supporting wineries and biodynamic farms with creative marketing and brand storytelling.

Through her business, Erica Rushbrook Coaching, she empowers women to build joyful, sustainable relationships with food, their bodies, and their health—helping them step into their full potential and share their gifts with the world.

At the core of her work is a mission to celebrate the pleasure and nourishment of real food— its power to nourish and heal the body, bring joy and connection to our lives and communities and care for the planet.
