Coconut & Apricot Snacks

Ingredients

  • 1/2 cup light tahini

  • 1/2 cup honey/rice malt syrup

  • 1/2 cup desiccated coconut

  • 1/2 cup ground flaxseed

  • 1 cup dried apricot pieces or sultanas

  • 1/4 cup chopped almonds

Additional coconut for coating.


Instructions

In a large bowl, mix all the ingredients together to make a stiff mixture. Use more coconut if necessary. Shape into balls with wet hands and roll in additional coconut. Refrigerate to firm up.
