Sesame Radish
This recipe is inspired by renowned Australian chef and restaurateur Andrew McConnell, who has a classic sesame cucumber recipe. These little radish bites are delicious, versatile, and full of flavour.
Enjoy them as a quick snack, pop them in a lunch box, add them to a cheese or dip board, or serve as a delicate appetiser at your next dinner party.
The ideal marination time is around 15 minutes — long enough for the flavours to soak in, but any longer and the radishes start to soften. Feel free to experiment to find your perfect texture.
Radishes are a wonderful vegetable to include in your diet. Their pungent, slightly bitter flavour is, from a Traditional Chinese Medicine perspective, excellent for clearing mucus and supporting digestion — particularly helpful when enjoying rich or fatty foods. In spring, radishes feel especially supportive for cleansing and revitalising the body.
Ingredients
1 bunch French breakfast radishes or small red radishes
2 tsp light soy sauce
1 tsp raw honey
1 tsp sesame oil
White or black pepper
Raw or toasted sesame seeds to garnish
Instructions
If radishes are small, cut in half; if larger, cut into bite-sized pieces.
Season with a pinch of sea salt and set aside in the fridge for up to 30 minutes (less is fine)
When ready to serve combine the soy sauce and honey in a bowl.
Drain and rinse the salt off the radishes.
Pat dry with a tea towel and put into a clean bowl.
Marinate with the soy/honey mixture, adding pepper and sesame oil to taste.
Serve with toasted or raw sesame seed
